WHAT IS GINSENG SPROUT?

Ginseng Sprout is young ginseng showing full leafing after 30~40 days growth of ginseng seedling.

Ginseng seedling (苗蔘) is a result of ginseng seed grown over one year in the soil. Usually ginseng seedlings need to have a dormant period during the winter season for growing in the next year, but if a dormant environment is provided with temperature and humidity similar to the winter season in a cold storehouse, the dormancy of ginseng seedling is possible anytime. Ginseng seedlings grown after passing through such dormant period show a better growth state than those grown without a dormant period.

Ginseng Sprouts can be obtained by defrosting 1~2 years old ginseng seedlings stored at low temperature and growing them in hydroponics or in the bare ground for 2~3 months to shoot out the bud. Because they are grown purely without pesticide or fertilizer during a short cultivation period, you can eat them like normal vegetables.

Ginseng Sprout, applicable to various dishes

The stems and leaves of hydroponic ginseng sprouts are so soft that you can eat whole ginseng including the roots or add them to salad or bibimbap and enjoy them like regular vegetables. In addition, through powder processing, you can add it to many kinds of dishes such as noodles, smoothies, bean paste, and so forth. Ginsenoside is relatively heat-stable and its efficacy is maintained after cooking with heat, and especially its Re ingredient in leaves and stems is changed to Rg2 by heat. But, the expiration date is quite short 1~2 weeks because the leaves are easily withered.

Contents comparison of key ginsenoside ingredients

The characteristic of ginseng sprout differentiated from aged fresh ginseng is the difference in ginsenoside ingredient. Usually only roots are eaten from aged ginseng, but both leaves and stem can be used from ginseng sprout, so ingredients included in leaves and stems can be taken together. In general, reported ginsenoside ingredients contained in leaves and stems more than roots include Re, Rg1, Rg2, Rh1, and Rd. In particular, ginsenoside F1, F2, and F5 are mainly contained in leaves. F1 helps to reduce wrinkles and regenerate skin, F2 contains anti-inflammatory ingredient and helps to relief atopy and itchy, and F5 suppress melanin cell and offers whitening effect. Moreover, according to clinical test results, it is proven that leaf and stem fermentation of ginseng sprout is safely usable bland substance that reduces wrinkles around the eyes, prevents melanin generation, and promotes collagen generation. Contents comparison of anti-oxidation substances

In addition to ginsenoside, it is revealed that ginseng sprout has higher contents of anti-oxidation ingredient 'polyphenol’ and 'flavonoid' and effect of suppressing 'tyrosinase’ a cause of spots and blemishes on the skin.
